Although the Taiwanese tea industry is relatively young by tea standards (forming only in the mid-19th century), it has quickly risen to miraculous heights. This is because central Taiwan’s mountains present the perfect conditions for both challenging and nurturing the tea plant. Temperature, rainfall, altitude, and light are all ideal. The ultimate expression of this highly refined, essentially perfected process is what is know as high mountain Taiwanese oolong. And the ultimate expression of high mountain Taiwanese oolong is the teas grown at the very top of Li Shan or Pear Mountain. There is nothing in the tea world quite like high elevation Li Shan. Its mouthfeel is thick and long-lasting. It is cooling and floral, with a remarkable complexity of sub-flavors that also includes green herbs and vegetables and fresh cream. It is known in Chinese medicine to clear and nourish the lungs. And it provides a soft, centered and focused mental clarity that is indescribable. Simply put, this is just about as good as it gets in tea.
